Instructions

Cooking steps for bacon cheeseburger casserole

  1. So the first step is frying up your bacon.
  2. You can fry it whole and then chop it or just chop it up and try it like I’m doing here.
  3. So while the bacon is cooking, I’m going to go ahead and whisk together the eggs.
  4. The tomato paste, the heavy cream, and the seasonings.
  5. I’m going to be adding garlic powder and onion powder to this mixture.
  6. Then, just whisk to combine.
  7. The bacon is done, so I’m just going to drain it on some paper towel until I need it.
  8. The next step is to cook your ground beef with onion and garlic.
  9. The recipe doesn’t call for this, but I’m adding black pepper.
  10. So once the meat is completely cooked, you just want to put it into a 13 by 9 inch pan. This cooked ground beef is versatile for many meals, including a delicious creamy beef pasta for dinner.
  11. Add in your cooked bacon and about two-thirds of your sharp cheddar cheese.
  12. Then you just want to mix to combine everything.
  13. Then you’re going to pour your egg mixture over the top.
  14. I’m just going to spread it out, and then I’m just going to wiggle it around a little bit to get that egg mixture down in there.
  15. I just want the egg mixture to kind of seep down in a little bit.
  16. And then top with the remaining cheddar cheese.
  17. Now you just pop this in the oven for 30 to 35 minutes, and it will be ready.
  18. We’re going to need to let that cool down just a little bit before cutting into it.

Cooking Tips

I’m going to go a little heavy on the garlic, just for the extra flavor.

We found this recipe to be a little bit bland, so I’m adding lots of flavor to every layer of the dish.

So full disclosure, this ground beef was already cooked and in my freezer, so I’m just heating it up and cooking down the onion and garlic a bit. For another easy and quick ground beef dish, consider making an easy BBQ tortilla wrap burger.

I just left the bacon grease in the pan, and I’m using that to get this all heated up.

Serving Suggestions

I’ll be serving this with green beans, and normally when I make this, I’m trying to stick to the recipe for this video. For another satisfying meal, try our quick weeknight garlic butter steak bites recipe.

I would just throw the green beans right into the casserole.

It just makes an easy one-pot meal, but I’m not going to do that today.

I’m going to show you mostly the way the original recipe is.

Here’s what it looks like when it’s plated.

Easy Low Carb Bacon Cheeseburger Casserole

This delicious low carb bacon cheeseburger casserole is an easy one-pot meal packed with flavor in every layer. Perfect for a satisfying, keto-friendly dinner.

  • 8 slices bacon, chopped
  • 1.5 lbs ground beef
  • 1/2 medium onion, chopped (or 1 tsp onion powder)
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 6 large eggs
  • 2 tbsp tomato paste
  • 1/2 cup heavy cream
  • 1 tsp garlic powder (additional, for egg mixture)
  • 1 tsp onion powder (additional, for egg mixture)
  • 1/2 tsp black pepper, or to taste
  • 2 cups sharp cheddar cheese, shredded, divided
  • Salt, to taste
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, fry the chopped bacon until crispy. Once cooked, remove the bacon with a slotted spoon and drain it on paper towels. Reserve some bacon grease in the skillet.
  3. In the same skillet with bacon grease, add the ground beef, chopped onion (if using fresh), and minced garlic (if using fresh). Cook over medium heat, breaking up the beef, until it is fully browned and no pink remains. Drain any excess fat if necessary. Season the beef mixture with salt and pepper to taste.
  4. While the beef and bacon are cooking, whisk together the eggs, tomato paste, heavy cream, 1 teaspoon garlic powder, and 1 teaspoon onion powder in a medium bowl until well combined.
  5. Once the ground beef is cooked, spread it evenly into a 13×9 inch baking pan.
  6. Add the cooked, crispy bacon to the pan with the ground beef. Sprinkle about two-thirds of the shredded sharp cheddar cheese over the beef and bacon.
  7. Mix everything in the pan gently to combine the beef, bacon, and cheese.
  8. Pour the egg mixture evenly over the top of the beef and bacon mixture. Gently spread it out and wiggle the pan a little to help the egg mixture seep down into the casserole.
  9. Top with the remaining one-third of shredded cheddar cheese.
  10. Bake in the preheated oven for 30 to 35 minutes, or until the casserole is set and the cheese is melted and bubbly.
  11. Remove from the oven and let the casserole cool for a few minutes before slicing and serving.
