Easy Creamy Merry-Me Chicken Recipe with Parmesan and Spinach

This ‘Merry-Me Chicken’ recipe is designed to impress, delivering a rich, creamy, and flavorful dish that’s surprisingly easy to make. Featuring pan-seared chicken thighs smothered in a luscious sauce with Parmesan cheese and fresh spinach, it’s a guaranteed crowd-pleaser that will earn you respect in the kitchen.
- 4-6 boneless, skinless chicken thighs
- 2-3 tablespoons seasoning blend (your favorite)
- 2 tablespoons avocado oil, divided
- 1/2 large onion, diced
- 3-4 cloves garlic, minced
- 3 tablespoons unsalted butter
- 1 cup chicken broth
- 1 tablespoon + 1 teaspoon all-purpose flour
- 2 cups heavy cream
- 1-2 cups fresh Parmesan cheese, grated
- 4-6 cups fresh spinach, packed
- Cajun seasoning, to taste (optional, for heat)
- Pat chicken thighs dry. In a bowl, mix chicken with your seasoning blend and 1 tablespoon of avocado oil until well coated. Ensure seasoning is evenly distributed, including under the skin if using bone-in, skin-on thighs. Set aside.
- Dice half an onion and mince the garlic. Grate 1 to 2 cups of fresh Parmesan cheese. Set all prepped ingredients aside.
- Heat 1 tablespoon of avocado oil in a large cast-iron skillet or oven-safe pan over medium-high heat until shimmering.
- Carefully place the seasoned chicken thighs in the hot skillet. Sear for 5-6 minutes per side, until golden brown. The chicken does not need to be cooked through at this stage.
- Remove the chicken from the skillet and transfer to a plate; set aside.
- Reduce heat to medium. Add butter to the skillet, scraping up any browned bits from the bottom of the pan as it melts.
- Add the diced onion to the skillet and sauté for 3-5 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a boil, stirring to combine all flavors.
- Whisk in the flour until no lumps remain. Continue to stir as the mixture thickens slightly.
- Gradually add the heavy cream, stirring constantly, and bring the sauce back to a gentle boil. Let it simmer for a few minutes until it begins to thicken.
- Stir in the fresh spinach, adding it in batches if needed, until it wilts down into the sauce.
- Remove the skillet from the heat. Stir in the grated Parmesan cheese, mixing continuously to prevent it from burning to the bottom of the pan. If desired, add Cajun seasoning for a spicy kick.
- Return the seared chicken thighs to the skillet, nestling them into the creamy spinach sauce and ensuring they are coated.
- Preheat your oven to 450°F (230°C).
- Place the skillet in the preheated oven and bake for approximately 25-30 minutes, or until the chicken is fully cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from oven and let rest for a few minutes before serving. Enjoy!
