Learn how to make a delicious, cheesy, and crispy beef quesadilla that’s perfect for family dinners or gatherings. This version features a homemade taco seasoning and a savory beef filling with vegetables, all wrapped in a golden, crispy tortilla with plenty of melted cheese.
- For the Taco Seasoning:
- 1/2 teaspoon smoked paprika
- 1 teaspoon cornstarch
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt (or more to taste)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- For the Beef Filling:
- Olive oil
- Garlic (cloves, minced)
- Green bell pepper (chopped)
- Sweet peppers (chopped)
- Jalapeno (minced, optional)
- Onion (chopped)
- 1/2 pound ground beef
- 1/4 cup corn (frozen or canned)
- Potato (small, diced)
- 1/4 cup beef broth (or more if needed)
- Small beef boullion cubes (optional, for extra flavor)
- Green onion (chopped)
- 1/4 cup cooked pinto beans
- For the Quesadilla:
- Tortillas (flour, large)
- Butter
- Grated cheddar cheese
- Monterey Jack cheese
- Any other cheese as you like
- 1. Prepare all vegetables by chopping garlic, onions, green bell pepper, sweet peppers, jalapeno, and dicing the potato.
- 2. Make the Taco Seasoning: In a small bowl, combine 1/2 teaspoon smoked paprika, 1 teaspoon cornstarch, 1/2 teaspoon cumin, 1/2 teaspoon chili powder, 1/2 teaspoon ground black pepper, 1/4 teaspoon salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon onion powder. Mix well. Add more salt if desired.
- 3. Sauté Vegetables: In a large pan, add a drizzle of olive oil over medium heat. Sauté the minced garlic, chopped onion, green bell pepper, sweet peppers, and jalapeno until softened. Remove from the pan and set aside.
- 4. Brown Ground Beef: In the same pan, add the 1/2 pound ground beef. Brown until no red color remains. Drain any excess liquid.
- 5. Season the Beef: Add the prepared taco seasoning to the browned ground beef. Stir for about a minute until fragrant.
- 6. Combine Filling Ingredients: Add the sautéed vegetables back into the pan with the beef. Stir everything together. Add 1/4 cup corn and the diced potato.
- 7. Simmer Filling: Pour in 1/4 cup beef broth. Cover the pan and let it simmer for 8 to 10 minutes, or until potatoes are tender. Add more beef broth later if needed.
- 8. Finish Filling: After simmering, add the small beef boullion cubes (if using), chopped green onion, and 1/4 cup cooked pinto beans. Stir well. Taste the filling and adjust seasoning (e.g., salt, spices) if needed. Set the beef filling aside.
- 9. Prepare Tortilla (Optional Crispy Layer): In a clean pan, add butter over medium-low heat. Once melted, add a tortilla. Cook, flipping occasionally, until it’s crispy. Remove the tortilla and set aside. (This step can be skipped if you prefer a softer tortilla inside the quesadilla.)
- 10. Melt Cheese for Quesadilla: Turn down the heat in the pan to low. Sprinkle a generous amount of grated cheddar, Monterey Jack, and any other cheese directly into the pan.
- 11. Assemble First Quesadilla: Lay one tortilla over the melting cheese in the pan. Once the cheese is melted and starts to crisp on the bottom, carefully flip the tortilla so the cheesy side is up.
- 12. Add Filling and Fold: Spread the ground meat mixture on one half of the tortilla. Add more cheese on top of the filling if desired. Slowly fold the other half of the tortilla over the filling.
- 13. Crisp the Quesadilla: For an extra crispy exterior, drop a small amount of cheese directly into the pan next to the folded quesadilla. Place the folded quesadilla seam-side down onto the melting cheese. Cook, pressing gently, until the cheese on the outside is crispy and golden brown. Flip and cook the other side until crispy to your liking.
- 14. Slice and Serve: Remove the finished quesadilla from the pan, slice it into wedges, and serve immediately.
