And today is another good one. And I would say so far, any of the coffee cats that we’ve done have been neighbors that the family requests all the time.
We’ve done the Crunchwrap Supremes. And we’ve also done the double-decker tacos. Supremes. Both turned out excellent. If you’re looking for another comforting dish, consider our homemade baked ziti with cheesy meat sauce.

Easy Homemade Grilled Cheese Burrito

Recreate your favorite fast-food indulgence at home with this easy homemade grilled cheese burrito. Inspired by the popular Taco Bell version, this recipe features seasoned ground beef, Spanish rice, and a melty cheese crust, promising a satisfying meal that’s even better than the original.
- 1 lb ground beef (80/20 lean)
- 1 packet taco seasoning
- 4-6 large flour tortillas (gigantic size)
- 1 cup cooked Spanish rice
- 1 cup shredded Mexican blend cheese
- 1/2 cup tortilla strips (crushed or whole)
- 1/2 cup sour cream
- 1-2 tbsp vegetable oil (for grilling)
- 1 cup shredded cheddar cheese (for the grilled crust)
- Mild sauce, for serving
- Heat a large skillet or griddle over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until fully browned. Drain any excess fat.
- Add the taco seasoning to the cooked ground beef along with 1/4 cup of water. Stir well and cook according to packet directions, typically for 2-3 minutes, until the liquid has absorbed and the beef is well seasoned.
- While the beef is cooking, gently warm the flour tortillas on a separate dry pan or microwave for 15-20 seconds each to make them more pliable.
- To assemble each burrito: Lay a warm tortilla flat. Spread about 1 tablespoon of sour cream in the center. Layer with a portion of the seasoned ground beef, a scoop of Spanish rice, a sprinkle of Mexican blend cheese, and a few tortilla strips.
- Fold the sides of the tortilla inward, then tightly roll the burrito from the bottom up, ensuring all fillings are enclosed.
- Clean the skillet or griddle. Add 1 tablespoon of vegetable oil and heat over medium heat.
- Once the oil is hot, sprinkle a generous amount (about 1/4 cup) of shredded cheddar cheese directly onto the hot surface in a rectangular shape, slightly larger than your burrito.
- Immediately place one assembled burrito seam-side down onto the melting cheddar cheese. Press down gently with a spatula to help the cheese adhere. Cook for 2-3 minutes, or until the cheddar cheese is golden brown and crispy, forming a crust on the burrito.
- Carefully flip the burrito. Sprinkle another 1/4 cup of shredded cheddar cheese onto the griddle next to the burrito, and quickly move the burrito onto this fresh cheese. Press gently again.
- Cook for another 2-3 minutes, or until the second side of cheddar cheese is also golden brown and crispy.
- Repeat the grilling process for the remaining burritos, adding more oil to the griddle as needed.
- Serve the grilled cheese burritos hot with a side of mild sauce.
