Cooking beans casserole tips

Okay, this has been baking for about 45 to 50 minutes, a little longer than I thought.

It’s taken too long to get my cheese bubbly, so I went ahead and just broiled it for a few minutes, because my potatoes were already soft. This technique can also be useful for achieving a golden crust on other dishes, such as our easy one-pan ground beef and rice recipe.

Easy Beans Casserole Recipe with Roasted Petanos and Cheddar

A comforting and hearty beans casserole featuring tender brown beans seasoned with creole spices, mixed with a creamy chicken and mushroom soup base, layered with roasted petanos (a type of root vegetable or potato), and topped with bubbly, golden cheddar cheese. Perfect for a cozy family meal.

  • Brown beans 2 pounds
  • Salt 0.5-1 teaspoon
  • Pepper To taste
  • Creole seasoning 0.5 teaspoon
  • Onion, finely chopped 1
  • Cream of chicken soup 1 can (or 2, as desired)
  • Cream of mushroom soup 1 can (or 2, as desired)
  • Milk 1.5 cups
  • Salt (for soup mixture) 0.5 teaspoon
  • Pepper (for soup mixture) 0.5 teaspoon
  • Large, roasted petanos 2-3
  • Cheddar cheese Generous amount, for topping
  1. 1 Prepare the beans: If using dry beans, cook them according to package directions until tender. If using canned beans, drain and rinse. In a large bowl, add the 2 pounds of brown beans.
  2. 2 Season the beans: Add 0.5 to 1 teaspoon of salt, a generous amount of pepper, and 0.5 teaspoon of creole seasoning to the brown beans. Add the finely chopped onion. Mix all these ingredients together until well combined. (If the beans were warm from cooking, you may turn off the heat before mixing).
  3. 3 Prepare the soup mixture: In a separate bowl, combine the cream of chicken soup and cream of mushroom soup. You can use one of each, two of each, or two of either one, based on preference. Add about 1.5 cups of milk.
  4. 4 Season the soup mixture: Add about 0.5 teaspoon each of salt and pepper to the soup mixture. Whisk everything together until smooth and well combined.
  5. 5 Prepare the petanos: Slice the 2 to 3 large, roasted petanos. You will need enough slices to create a nice thick layer that covers the bottom of your casserole dish.
  6. 6 Assemble the casserole: Lay the sliced roasted petanos in the bottom of a casserole dish, forming a thick, even layer.
  7. 7 Add bean layer: Sprinkle the seasoned bean and onion mixture evenly over the layer of petanos.
  8. 8 Pour soup mixture: Evenly pour the prepared soup mixture over the bean layer.
  9. 9 Bake the casserole: Place the casserole dish in the oven. Bake for approximately 45 to 50 minutes. The original recipe mentioned 30 minutes, but later stated it took 45-50 minutes.
  10. 10 Check for doneness: Poke through a petano at the bottom of the dish to check if they feel somewhat firm but cooked through and soft.
  11. 11 Add cheese and finish baking: During the last 10 minutes of baking, sprinkle a generous amount of cheddar cheese over the top of the casserole. Return to the oven until the cheese is bubbly and golden. If the cheese is not browning sufficiently, you may broil it for a few minutes, carefully watching to prevent burning.
  12. 12 Serve: Remove from oven and let stand for a few minutes before serving. Enjoy your hearty beans casserole!
