Easy Baked Turkey Spinach Penne with Ricotta and Mozzarella

A comforting and easy baked pasta dish featuring savory ground turkey, fresh spinach, and penne pasta, all tossed in a flavorful marinara sauce with creamy ricotta cheese, then baked to perfection with melted mozzarella and Parmesan.
- 1 pound ground turkey
- Salt, to taste
- Pepper, to taste
- Red pepper flakes, to taste
- Onion powder, to taste
- 2 cloves garlic, minced
- A little olive oil
- 1 bag baby spinach (about 5-6 oz)
- 1 jar marinara sauce (approx. 24-28 oz)
- 2 cups part-skim ricotta cheese
- 1/2 box penne pasta (about 8 oz)
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- Preheat your oven to 375°F (190°C).
- Cook the penne pasta according to package directions until al dente. Drain and reserve a small amount of pasta water.
- In a large skillet or Dutch oven, heat a little olive oil over medium-high heat. Add the ground turkey and break it up with a spoon. Season with salt, pepper, red pepper flakes, onion powder, and minced garlic. Cook until the turkey is deeply browned, stirring occasionally.
- Drain any excess fat from the turkey. Add the whole bag of baby spinach to the skillet and cook until wilted.
- Stir in the marinara sauce. Add a small amount of water to the empty marinara jar, swirl it around to loosen any remaining sauce, and pour it into the skillet.
- Reduce heat to low. Stir in the part-skim ricotta cheese until well combined. If the sauce seems too thick, add a splash of the reserved pasta water.
- Add the cooked penne pasta to the skillet with the turkey-spinach-ricotta mixture and toss to combine everything thoroughly.
- Transfer the pasta mixture into a baking dish.
- Evenly sprinkle about half a cup of mozzarella cheese over the top of the pasta. Then, sprinkle about a quarter cup of Parmesan cheese.
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and continue to bake for another 10 minutes, or until the cheese is melted, bubbly, and lightly browned.
- Let it rest for a few minutes before serving.
