  • one cup of powdered sugar
  • two tablespoons of melted butter
  • one teaspoon of vanilla
  • two tablespoons of milk

Instructions

Step-by-step instructions for the yellow cake mix coffee cake

  1. You want to start with a 9×13 pan and prep it really well with some non-stick baking spray.
  2. So you’re going to divide that yellow cake mix into two portions.
  3. That first part is for the brown sugar pecan streusel.
  4. You’re going to mix two-thirds cup of that yellow cake mix with half a cup of brown sugar, half a cup of chopped pecans, two tablespoons of cinnamon, yes, two tablespoons, and three tablespoons of melted butter.
  5. You want to stir that together really well so the butter mixes with all the dry ingredients, and then you can just set that to the side.
  6. Now take the rest of that dry yellow cake mix and you’re going to pop it in a bowl with one and a half cups of sour cream, three eggs, and two teaspoons of vanilla.
  7. And then either with a stand mixer or with a handheld mixer, you’re going to blend that together until it’s fully combined, ensuring a smooth batter like for a moist and zesty cranberry cake.
  8. In that prepared 9 by 13 pan, you’re going to spread half of the batter mixture into the bottom, spreading it evenly.
  9. Then you’re going to take half of that streusel mixture and sprinkle that over top of the batter.
  10. Then we’re going to finish with the rest of the batter.
  11. Now top it with the rest of that brown sugar pecan streusel mixture.
  12. And we’re going to take this, pop it in a 350 oven for 30 minutes until it is golden brown and the center is completely set, similar to baking a super soft banana bread loaf.
  13. So what I’m going to do now is let this cool and we’re going to make the powder sugar vanilla butter glaze that’s going to go over top.
  14. You’re going to mix one cup of powdered sugar with two tablespoons of melted butter, one teaspoon of vanilla and two tablespoons of milk.
  15. Just stir that together really well until it’s fully combined.
  16. Now make sure that your coffee cake is totally cooled and then you can drizzle this glaze over the top. For other delicious dessert toppings, consider making a smooth chocolate ganache.

Cooking Tips

Tips for baking coffee cake successfully

  • Any brand will do.
  • You don’t want to have any dry bits of yellow cake mix left in the bowl.
  • I find that a offset spatula helps with this process quite a bit.
  • Do the best you can spreading it. It does not have to be pretty.
  • I want it a little bit more powdered sugar in mine so that it was a better drizzle consistency and that’s exactly what you want it to look like.
  • I like to take a spoon and just let it run off the end of the spoon all over the cake.

Serving Suggestions

You can actually serve it on the side if you’re having an event or a party or something and people can drizzle a little extra on themselves. This coffee cake makes a wonderful addition to any dessert spread, perhaps alongside a decadent homemade chocolate cheesecake.

So I really hope you give this cake mix coffee cake a try in your kitchen and it helps you feel like a success.

Until then have a great week ahead. See ya!

Easy Yellow Cake Mix Coffee Cake with Cinnamon Pecan Swirl

Turn a simple yellow cake mix into an incredible coffee cake featuring layers of tender, moist cake with a delicious cinnamon, butter, sugar, and pecan swirl, topped with a powdered sugar vanilla icing. This super easy recipe is perfect for breakfast, brunch, or an afternoon sweet treat with a cup of coffee.

  • For the Coffee Cake: Array
  • For the Brown Sugar Pecan Streusel: Array
  • For the Batter: Array
  • For the Powder Sugar Vanilla Butter Glaze: Array
  1. Preheat your oven to 350°F (175°C). Prepare a 9×13 inch baking pan by generously coating it with non-stick baking spray.
  2. Divide the yellow cake mix from the box into two portions: 2/3 cup for the streusel and the rest for the batter.
  3. **Prepare the Brown Sugar Pecan Streusel:** In a medium bowl, combine the 2/3 cup yellow cake mix, 1/2 cup brown sugar, 1/2 cup chopped pecans, 2 tablespoons cinnamon, and 3 tablespoons melted butter. Stir well with a fork until the butter is fully incorporated into the dry ingredients and crumbly. Set aside.
  4. **Prepare the Coffee Cake Batter:** In a large bowl, combine the remaining dry yellow cake mix with 1 1/2 cups sour cream, 3 eggs, and 2 teaspoons vanilla extract. Using a stand mixer or a handheld mixer, blend the ingredients together until fully combined and smooth, ensuring no dry bits of cake mix remain.
  5. **Assemble the Coffee Cake:** Spread half of the batter mixture evenly into the bottom of the prepared 9×13 inch pan. An offset spatula can help with this process. It doesn’t need to be perfectly neat.
  6. Sprinkle half of the prepared streusel mixture evenly over the first layer of batter.
  7. Carefully spread the remaining batter over the streusel layer. Do your best to spread it evenly.
  8. Top with the rest of the brown sugar pecan streusel mixture.
  9. Bake for 30 minutes, or until the top is golden brown and the center is completely set when lightly touched. A toothpick inserted into the center should come out clean (if avoiding the streusel layer).
  10. Remove from the oven and let the coffee cake cool completely in the pan before applying the glaze.
  11. **Prepare the Powder Sugar Vanilla Butter Glaze:** While the cake cools, combine 1 cup powdered sugar, 2 tablespoons melted butter, 1 teaspoon vanilla extract, and 2 tablespoons milk in a small bowl. Stir well until fully combined and smooth. Adjust with a little more powdered sugar for a thicker glaze or a few drops more milk for a thinner, more drizzly consistency if desired.
  12. Once the coffee cake is completely cooled, drizzle the glaze over the top using a spoon, allowing it to run off the end of the spoon all over the cake.
  13. Slice and serve. Enjoy!
