Ingredients

Ingredients for double chocolate chip cookies

  • ○ 120 grams or 1 cup all-purpose flour
  • ○ ½ teaspoon baking soda
  • ○ ½ teaspoon salt
  • ○ ⅓ cup or 33 grams cocoa powder (Dutch processed or natural)
  • ○ ½ cup or 113 grams room temperature unsalted butter
  • ○ ⅓ cup or 66 grams granulated sugar
  • ○ ½ cup or 110 grams packed light brown sugar
  • ○ 1 large egg
  • ○ 2 teaspoons vanilla extract
  • ○ 1 cup chocolate chips
  • ○ Optional: extra chocolate chips for topping
  • ○ Optional: flake salt for topping
  • ○ Optional: chopped toasted pecans or walnuts

Instructions

  1. Preheat your oven to 375°F.
  2. In a medium bowl, combine the flour, baking soda, and salt. Add the cocoa powder and sift it in, or just make sure there are no lumps, then whisk it all together. Set this bowl aside.
  3. In a stand mixer with a paddle attachment, beat the room temperature unsalted butter, granulated sugar, and packed light brown sugar for about three minutes on medium speed. It should get light and fluffy. Make sure to scrape down the sides of the bowl as needed.
  4. Add the large egg and vanilla extract to the butter mixture. Mix until everything is just combined.
  5. With the mixer on low speed, slowly add the dry flour mixture to the wet ingredients. Mix until it’s almost combined. Give the bowl another good scrape with a spatula to make sure all the flour is mixed in from the bottom and sides.

Folding chocolate chips into cookie dough

  1. Fold in the chocolate chips until they are evenly distributed throughout the dough.
  2. Scoop out the cookie dough into pieces about one and a half tablespoons each. Place them on a baking sheet, leaving about two inches of space between each cookie. You’ll likely need two baking sheets.
  3. If you want, press a few extra chocolate chips or a sprinkle of flake salt on top of each dough ball before baking. You could also mix in chopped nuts like pecans or walnuts with the chocolate chips.
  4. Bake for about 10 minutes, or until the edges of the cookies are set.
