Having high cholesterol means that your blood vessels are blocked, which makes you more likely to have heart disease and a stroke. It can be quite harmful because there are no signs of excessive cholesterol. It is usually found during normal blood tests and is quite dangerous.

Cholesterol is only good for the body in small amounts. The body needs a little bit of cholesterol to construct cell membranes, manufacture hormones, and keep your metabolism working right. If there is too much cholesterol in the blood, some of it may stick to the walls of the arteries. This can happen in the coronary arteries of the heart, the carotid arteries of the brain, and the arteries that carry blood to the legs and intestines.

A delicious and easy recipe designed to support a cholesterol-lowering diet. This dish is packed with omega-3 fatty acids from salmon, fiber and antioxidants from an array of colorful vegetables, and healthy fats from olive oil, all contributing to a heart-healthy lifestyle.

  • 4 (6-ounce) salmon fillets, skin on or off
  • 1 lb broccoli florets, cut into bite-sized pieces
  • 2 bell peppers (any color), deseeded and sliced
  • 1 zucchini, cut into half-moon slices
  • 1 pint cherry tomatoes
  • 3 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • Juice of 1 lemon
  • Fresh parsley, chopped, for garnish (optional)
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the broccoli florets, bell peppers, zucchini, and cherry tomatoes. Drizzle with 2 tablespoons of olive oil, minced garlic, dried oregano, and black pepper. Toss gently to coat all the vegetables evenly.
  3. Spread the seasoned vegetables in a single layer on the prepared baking sheet.
  4. Pat the salmon fillets dry with paper towels. Place them on the same baking sheet, nestled among the vegetables, or on a separate smaller baking sheet if preferred. Drizzle the remaining 1 tablespoon of olive oil over the salmon and squeeze half of the lemon juice over the fillets.
  5. Bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp. Cooking time may vary depending on the thickness of your salmon fillets.
  6. Remove from the oven. Squeeze the remaining lemon juice over the entire dish. Garnish with fresh chopped parsley, if desired.
  7. Serve immediately and enjoy a delicious, heart-healthy meal.
