Ingredients for hamburger steak with onions and gravy displayed

  • 1 pound of ground beef (80/20 is best for flavor and texture)
  • ¼ cup of breadcrumbs
  • 1 big egg
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
  • 2 tablespoons of olive oil (for cooking the patties)
  • 2 tablespoons of butter
  • 2 medium yellow onions, sliced thinly
  • 2 cups of beef broth
  • 2 tablespoons of flour
  • 1 teaspoon of Worcestershire sauce
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 teaspoon of fresh thyme (optional for more flavor)
  • 1 tablespoon of cornstarch (optional for thickening)

How to make it

Mixing ground beef and ingredients into patties

  1. Combine the Ingredients: Put the ground beef, breadcrumbs, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper in a big bowl. Mix until just combined; don’t mix too much or the meat will get tough.

  2. Make the patties: Make four equal parts of the mixture and shape each one into a patty that is about ¾ inch thick.

  3. Cook the Patties: Put the olive oil in a big skillet and heat it over medium heat. Put the patties in the pan and cook them for 4 to 5 minutes on each side, or until they are browned and cooked through. Take the patties out of the skillet and put them somewhere else.

  4. Make the Onion Gravy: Add the butter to the same pan and let it melt. Then, sauté the onions. Add the sliced onions and cook them over medium heat for about 10 to 15 minutes, or until they are soft and golden brown.

  5. Make the Roux: Add the flour to the onions and mix well to coat. Cook for another 2 to 3 minutes to get rid of the taste of raw flour.

  6. Put in the broth: As you stir the beef broth in, it will slowly become thick. Add the Worcestershire sauce, salt, pepper, and (if using) thyme.

  7. Simmer: Bring the mixture to a simmer and cook until the gravy has thickened, about 5-7 minutes. Mix the cornstarch with a little cold water and add it to the gravy if you want it to be thicker. Stir until it thickens.

  8. Return the Patties: Put the cooked hamburger patties back in the skillet and push them down into the onion gravy.

  9. Allow the patties to simmer in the gravy for another 5 minutes so they can soak up the flavors.

Tips and serving

Use a thermometer to cook the ground beef patties to 160°F (71°C), then simmer in the gravy.
