A soy-based sauce coats ground turkey in this Korean-style skillet recipe.

Ingredients
Measure the ingredients below before you begin. Optional additions are marked in the list.

- 1/4 cup soy sauce
- 2 tsp cornstarch
- 1/2 tbsp brown sugar packed
- 1/2 tsp red chili flakes or to taste
- 2 tbsp sesame oil
- 2 cloves garlic minced
- 1 tbsp fresh ginger grated
- 15 oz (450g) ground turkey
- 6 tbsp chives chopped
- 2 tbsp sesame seeds
How to make it

In a small bowl, mix together soy sauce, cornstarch, brown sugar, and chili flakes. Mix until the cornstarch is completely dissolved, then set the sauce mixture aside.
Drizzle a large skillet with sesame oil and place it over medium-high heat. Add the minced garlic and grated ginger, stirring until fragrant, about 30 seconds to 1 minute.
Add the ground turkey to the skillet. Use a spoon or spatula to break the turkey into small chunks. Cook, stirring occasionally, until the ground turkey loses its raw pink color and is fully cooked through.
Stir the reserved soy sauce mixture into the skillet with the cooked turkey. Cook for 2 more minutes over high heat, stirring continuously, until the sauce turns golden brown and becomes fragrant and slightly thickened. If the sauce becomes too thick, you may add 1 tablespoon of water.
Add most of the chopped chives to the skillet, reserving some for garnishing. Stir to combine, then remove the skillet from the heat.
Sprinkle the cooked ground turkey with sesame seeds and garnish with the remaining chopped chives. Serve immediately with white or brown rice and steamed or roasted vegetables.
Tips and serving
Cook the ground turkey to 165°F (74°C) and simmer the cornstarch sauce until glossy.
