Banana, peanut butter, and oats bake into soft bars that can be cut into twelve portions.

Ingredients
Measure the ingredients below before you begin. Optional additions are marked in the list.

- 2 medium ripe bananas, mashed
- ½ cup of smooth peanut butter
- ¼ cup of maple syrup or honey
- 1 teaspoon of vanilla extract
- 1 egg (optional)
- 1 ½ cups of rolled oats
- ½ teaspoon of baking powder
- ¼ teaspoon of salt
- ½ teaspoon of cinnamon (optional)
- ¼ cup of dark chocolate chips or raisins (optional)
- 2 tablespoons of chopped nuts (optional)
How to make it

Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly oil it to prevent sticking.
In a large bowl, combine the rolled oats, baking powder, salt, and cinnamon (if using). Mix well and set aside.
In a medium bowl, mash the ripe bananas until smooth using a fork or potato masher. Add the peanut butter, maple syrup (or honey), vanilla extract, and egg (if using). Stir until all wet ingredients are completely mixed and the mixture is smooth.
Pour the wet mixture into the bowl with the dry ingredients. Gently mix with a spatula until the oats are evenly coated and a sticky dough forms. If desired, fold in optional add-ins like chocolate chips, chopped nuts, or dried fruit.
Transfer the mixture into the prepared baking pan. Press the mixture down firmly and evenly into the pan with the back of a spoon or spatula, ensuring it's level and compact. Smooth the top surface.
Bake in the preheated oven for 20 to 25 minutes, or until the edges are golden brown and the center is firm. Let the bars cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Once completely cool, use the parchment paper (if used) to lift the bars out of the pan onto a cutting board. Cut into 12 squares or rectangles. Serve immediately or store for later.
Tips and serving
Mix until the oats are evenly coated and cool the pan fully before slicing the bars.
