Ingredients

Measure the ingredients below before you begin. Optional additions are marked in the list.

Ingredients for broccoli chicken fritters

  • 1 1/2 pounds chicken breasts or ground chicken
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 cup finely chopped broccoli
  • 2 large eggs
  • 2 teaspoons chopped fresh dill
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons oil for frying (e.g., olive oil or avocado oil)

How to make it

Mixing broccoli chicken fritter ingredients in bowl

  1. If using chicken breasts, cut them into pieces and place in a food processor. Pulse for approximately 1 minute for finely chopped chunks. For a coarser grind, pulse for less time, being careful not to over-process into a paste. The meat should hold together when pinched. Alternatively, use pre-ground chicken.

  2. Prepare the broccoli: Hold the broccoli with the stem facing up and carefully cut the florets off with a sharp knife, making cuts down from the stem. Put a kettle of water on the stove and turn the heat to medium-high. Place the 1 cup of finely chopped broccoli florets in a steam basket and set it on top of the boiling water. Put a lid on the broccoli and let it steam for 2 to 3 minutes until tender-crisp. Remove the broccoli from the stove and let it cool slightly, then cut it into very small pieces if needed.

  3. In a large mixing bowl, combine the ground chicken, prepared broccoli, almond flour, grated Parmesan cheese, eggs, chopped dill, onion powder, garlic powder, salt, and pepper.

  4. Using clean hands, mix all the ingredients together thoroughly until completely combined. Lightly oil your hands, then pinch off a portion of the mixture and form it into a small patty, about 1/2 inch thick.

  5. Heat 2 teaspoons of oil in a nonstick skillet over medium heat.

  6. Cook the patties for about 3 to 4 minutes per side, or until they are a beautiful golden brown and cooked through.

  7. Serve the fritters hot with your favorite low-carb dip, a side salad, or as a light meal.

Tips and serving

Keep the patties similar in size and cook the center of each chicken fritter to 165°F (74°C).
