Air Fried Garlic Herb Potatoes
This is going to be the perfect side dish you would definitely love. These air fried garlic herb potatoes are super crispy and trust me, so so delicious and savoury.

What You’ll Need
- four yellow potatoes
- oregano leaves
- salt
- black pepper
- thyme
- parsley
- garlic powder
- olive oil (or sesame oil or any cooking oil)

How to Make It
- Start by cutting or slicing your potatoes into cubes or whatever sizes you want. For the potatoes, you can slice them to whatever size you choose.
- Once everything has been perfectly sliced, mix all the ingredients in there.

- Add some olive oil here for some extra flavor and to make it crispy, just the way you want it.
- Everything has been perfectly mixed. Now, transfer it onto your air fryer. Please, when you are air frying, do not over pack the air fryer because it’s not going to air fry perfectly.
- Put the potatoes into your air fryer. Use the fries option, which is about 400 degrees Fahrenheit. Reduce the time from 18 minutes to 12 minutes. So, air fry at 400 degrees Fahrenheit for 12 minutes.
- After 12 minutes, it’s looking so good. Right now it’s so good, but what you have to do is use a spoon and try to flip the side or just stir it around so that the other side cooks evenly.
- It’s going to go back inside your air fryer for 380 degrees Fahrenheit. Reduce the time for 10 more minutes.
- After that, our potatoes are ready to serve!

Recipe Notes
This recipe is so quick, like under 30 minutes even. Under 30 minutes, you have beautiful crispy garlic herb potatoes. If you don’t have a lot of time for dinner or to enjoy something, you should definitely go for this recipe. It’s so so flavorful.
If you don’t have dry ingredients, you can go with fresh ingredients, maybe fresh oregano, fresh parsley, fresh rosemary, fresh thyme, any of your favorite herbs, and it’s going to do the same thing.
If you don’t have olive oil, sesame oil or any cooking oil is perfect. I have once tried sesame oil and the flavor was so so good.
My Air-Fryer Potato Test
I pull one potato from the basket and split it: the outside should be deeply golden while the center stays creamy. For a different texture, compare these with my garlic-rosemary roasted potatoes. If the air fryer is already hot, they also work beside juicy air-fryer chicken breasts or garlic-Parmesan chicken wings.
Easy Air Fried Garlic Herb Potatoes Recipe for Crispy Sides

These air fried garlic herb potatoes are the perfect side dish, super crispy, delicious, and savory. A quick and flavorful recipe that’s ready in under 30 minutes.
- 4 yellow potatoes
- 1 tsp oregano leaves (dried or fresh)
- 1/2 tsp salt (to taste)
- 1/4 tsp black pepper (to taste)
- 1 tsp thyme (dried or fresh)
- 1 tsp parsley (dried or fresh)
- 1 tsp garlic powder
- 2 tbsp olive oil (or sesame oil, or any cooking oil)
- Start by washing and cutting your yellow potatoes into uniform cubes or the desired size for even cooking.
- In a large bowl, combine the cut potatoes with oregano leaves, salt, black pepper, thyme, parsley, and garlic powder.
- Add olive oil to the potato mixture and toss everything thoroughly until the potatoes are evenly coated with the oil and seasonings.
- Preheat your air fryer if necessary. Do not overpack the air fryer basket; cook in batches if needed to ensure potatoes cook perfectly and become crispy.
- Transfer the seasoned potatoes to the air fryer basket. Air fry at 400°F (200°C) for 12 minutes.
- After 12 minutes, carefully open the air fryer, use a spoon or spatula to flip or stir the potatoes around to ensure even cooking and browning on all sides.
- Return the potatoes to the air fryer and continue to air fry at 380°F (195°C) for an additional 10 minutes, or until golden brown and crispy.
- Once cooked to your desired crispiness, remove the potatoes from the air fryer and serve immediately as a delicious side dish.
Uniform potato pieces and an uncrowded basket are the keys to even browning. Shake or turn them midway through cooking. Refrigerate leftovers for up to 4 days and re-crisp at 380°F/195°C.
