What You’ll Need

Ingredients laid out for making pancakes

  • ○ 1 and 1/3 cups all-purpose flour (160 grams)
  • ○ 1 tablespoon baking powder
  • ○ 1/2 teaspoon salt (you could up this to 3/4 or 1 teaspoon if you love the bite of salt)
  • ○ 2 tablespoons sugar
  • ○ 1 cup whole milk (240 ml), warmed
  • ○ 4 tablespoons or 1/4 cup melted butter (56 grams)
  • ○ 1 large room temperature egg
  • ○ 2 teaspoons vanilla
  • ○ Butter, for cooking

How to Make It

  1. Combine Dry Ingredients: In a large bowl, combine the all-purpose flour, baking powder, salt, and sugar. Whisk until it’s all mixed up. Set that aside.
  2. Combine Wet Ingredients: In a medium bowl, combine the warmed whole milk, melted butter, room temperature egg, and vanilla. Give it a nice mix. You’re basically really wanting to break the egg up and kind of emulsify the butter into the milk. This smells exquisite.
  3. Warm the Pan: Get a big skillet or a griddle and place it over medium-low heat.
  4. Add Wet to Dry: Grab your flour and combine the wet ingredients with the dry. Use your spatula and just fold everything together. Do not over mix. You just want the flour to disappear, so scrape the bottom of the bowl down and look for any pockets of flour. You’ll have a couple of nodules hanging around, but it shouldn’t be super lumpy.

Mixing pancake batter with wet ingredients folded into dry

  1. Cook the Pancakes: Add a little butter to your pan to get some coverage. Now, add your batter in. A third to a quarter cup of batter per pancake is a nice rule of thumb. This recipe makes about six medium-sized pancakes.
  2. After about a minute, you can take a little peek. When you see bubbles on top, that means the batter is starting to set. Carefully give it a little flip. The other side cooks really quickly.
  3. Serve: Transfer your pancakes to a plate. Serve with lashings of butter and syrup. Just like that, you’re ready to enjoy!

Cooking Notes

Serving pancakes with syrup and butter on plate

The sugar is really important in this recipe because it does two things. You’re going to cover these in syrup, and yes, that’s sweet enough, but you’d like the cake itself to be a little sweet, so two tablespoons goes a long way. More importantly, the sugar is going to soften the batter, so it’ll give you a really tender, melt-in-your-mouth crumb. They’re not going to be dry and fluffy or bready and fluffy. It also caramelizes in the pan and gives you a really crisp, golden exterior.

The secret to an amazing fluffy pancake, besides using the right recipe, is cooking it over medium-low heat. If you go too hot, the sugar that you added to the pancake is going to burn, the inside will be raw, and it’s just not great. You want to slowly heat it up. And then the way to make it delicious is to cook it in butter. So even if you’re using a non-stick pan, you want to add some butter to your pan because that’s basically frying the edge of the pancake, and it’s going to make it nice and crisp and golden.

If your pan gets a little hot, reduce your heat and add more butter for the next batch. Less heat and more butter is a good lesson for cooking pancakes.

You can add chocolate chips, banana slices, or blueberries. This recipe will take any kind of mix-in really well. If you love breakfast treats, you might also enjoy making our super soft and easy banana bread recipe with walnuts. A third to a half a cup of any of the mix-ins will work just fine. If you have kids at home and they each want a different kind of pancake, you could just add the batter, sprinkle some mix-ins on top, and then it’ll get cooked into the pancake.

If you want, you can make these pancakes in advance. Cook them up and then just freeze them flat. Transfer them to a freezer bag, maybe with parchment paper in between so they don’t stick, and then you can microwave as needed for on-demand delicious pancakes.

Pancakes are my best friend, so good! The edges are so crisp, but the inside just melts like it dissolves in a buttery vanilla maple syrup extravaganza. It’s so good!
