Ingredients for lemon cookies

  • one half cup of butter that has been softened to room temperature is the first step in this lemon cookies recipe.
  • one third of a cup of powdered sugar
  • one large lemon
  • one cup of all purpose flour
  • one half of your lemon
  • one cup of powdered sugar

Instructions

  1. In the bowl of a stand mixer, or in a large bowl if using a hand mixer, you will need to cream one half cup of butter that has been softened to room temperature.
  2. To this, we will add one third of a cup of powdered sugar and mix on low for about 2 minutes.
  3. During this time, we will zest one large lemon. You want about one teaspoon of lemon zest and we will add that in and mix until it’s just combined.
  4. Now we can add one cup of all purpose flour and we are going to mix this on low for about a minute or so until the dough comes together.
  5. Now we will lightly flour our work surface, form our dough into a disc and lightly flour the top.

Dough formed and floured on work surface

  1. Roll out your cookie dough, I like to do about a quarter inch thickness.
  2. Using a 3 inch cutter, cut out your shapes. You will need to re-roll your scraps and cut as needed. This should make 12 cookies. If you enjoy making various types of baked goods, you might also like our perfectly gooey chocolate chip cookies recipe.
  3. Place them on a parchment lined sheet and bake at 350F or 175C for 10-12 minutes.
  4. Allow them to cool in the pan for a few minutes before transferring to a wire rack to finish cooling.
  5. Now we can make the icing. For more general advice on creating smooth and delicious toppings for your desserts, check out our easy tips for perfect buttercream frosting. In a small bowl, you will want to juice one half of your lemon. You will need two tablespoons of fresh lemon juice.
  6. To this, we will add one cup of powdered sugar and we are going to whisk this until it’s smooth.
  7. If it’s too thick, just add a little more lemon juice and if it’s too thin, add a little bit more powdered sugar.
  8. Now we can dip the top of our cookie into our lemon icing and we are going to allow this to set for about 2 hours.
