Step by step instructions for stroganoff

Instructions

  1. Let’s go ahead and prep our ingredients and get over to the cooked oven.
  2. We’re going to heat this over medium high heat and just give it a little spritz with our nonstick cooking spray.
  3. Once that gets up the temperature, we’re just going to add in our sliced turkey breast. For another delicious and quick meal, consider preparing easy garlic butter steak bites.
  4. We’re just going to make sure we spread this out. We don’t really want it all clumping up here.
  5. Now we’re just going to season this with some fresh cracked black pepper and a generous pinch of kosher salt.
  6. We’re going to let this cook for three to four minutes until it’s all cooked through and there’s no more pink left in, much like when preparing easy crock pot beef tips and gravy.
  7. Making sure we stir in every minute or two.
  8. Let’s go ahead and pull this off onto a clean plate and set this aside.
  9. To start our vegetable sauce, we’re going to start with two tablespoons of butter.
  10. Go ahead and melt that down.
  11. Once that butter’s all melted down, we’re going to saute our onions.
  12. We’re going to stir these every minute or so for about three minutes.
  13. We’re going to add in our mushrooms and we’re going to cook this down for five to seven minutes.
  14. Mix it in with the onions.
  15. Just sprinkle them with a tiny little bit of kosher salt.
  16. We’re going to add in our two cloves of garlic and we’re just going to let that get to know each other in there.
  17. Give this a good stir and we’re going to want to stir this frequently.
  18. See all this good stuff on the bottom? This is called the fawn. This is going to add so much flavor to our food.
  19. What we’re going to do is we’re going to add half a cup of this beef broth and we’re just going to scrape up all that delicious goodness.
  20. Turn down your heat to a simmer and we’re just going to let this simmer while we prep the rest of our ingredients for our sauce.
  21. In a separate bowl, we’re going to add in one and a half cups of beef about a tablespoon of Worcestershire Shire Sauce. This base is similar to what we use in our easy creamy beef pasta recipe.
  22. Then we’re going to whisk in two tablespoons of all-purpose flour.
  23. Give this a good mix until all the flour is dissolved and it makes a nice little slurry.
  24. Once most of the liquid has cooked out, we’re just going to add in this beef broth slurry.
  25. Bring this up to a boil and once it starts boiling, we’re going to turn it back down to a simmer for about five minutes to let it get nice and thick.
  26. The last thing that we have to do is add our creaminess. We’re going to use plain Greek yogurt for that.
  27. Stir this in until it’s well combined and we’re just going to finish this off by adding in our cooked turkey and all the juices from that.
  28. Give this another little stir here guys and then we’re going to let this sit for about a minute or so.
  29. One last taste test for seasoning.

Cooking tips for turkey stroganoff

Cooking Tips

  • Keep a close eye on this. Keep stirring it. We don’t want to overcook this turkey. If you’ve ever had dried turkey, it does not taste good.
  • We don’t want that garlic to burn. This should only take about 30 seconds.

Serving Suggestions

  • This recipe makes four servings.
  • We’re going to serve this on an egg noodle to the package instruction. This is about one cup of cooked egg noodle.
  • We’re going to top this with about a quarter of our stroganoff.
  • I’m just going to top this with a little bit of green onion.

And there you have it guys. That is how you make a high protein healthy turkey stroganoff.

This is incredible. I’m going to be adding this as a staple of my top 10 healthy recipes to make when I’m looking to meal prep. Another great option is this healthy superfood shepherd’s pie recipe.

Discover how to make a healthier, high-protein version of classic stroganoff by substituting ground beef with thinly sliced turkey breast and sour cream with plain fat-free Greek yogurt. This delicious dish is packed with protein, low in fat, and perfect for meal prep, served over egg noodles.

  • 500 grams (approx. 1.1 lbs) turkey breast, sliced thinly
  • Fresh cracked black pepper, to taste
  • Kosher salt, to taste (for turkey and vegetables)
  • Nonstick cooking spray
  • 2 tablespoons unsalted butter
  • 1 medium onion, chopped
  • 8 ounces (about 225g) mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth, divided (1/2 cup for deglazing, 1 1/2 cups for slurry)
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • 3/4 cup plain fat-free Greek yogurt
  • 8 ounces egg noodles (prepared according to package directions)
  • 2 tablespoons green onion, chopped (for garnish)
  1. Prepare your ingredients: slice turkey, chop onion, slice mushrooms, and mince garlic.
  2. Heat a large skillet or pan over medium-high heat and lightly spray with nonstick cooking spray.
  3. Add the thinly sliced turkey breast to the hot pan, spreading it out to avoid clumping.
  4. Season the turkey with fresh cracked black pepper and a generous pinch of kosher salt.
  5. Cook the turkey for 3-4 minutes, stirring every minute or two, until it’s cooked through and no longer pink. Remove the cooked turkey from the pan and set aside on a clean plate, reserving any juices.
  6. To start the vegetable sauce, add 2 tablespoons of unsalted butter to the same pan and melt it down.
  7. Add the chopped onions to the melted butter and sauté, stirring every minute or so, for about 3 minutes until softened.
  8. Add the sliced mushrooms to the pan with the onions and cook for 5-7 minutes, mixing them in. Sprinkle with a tiny bit of kosher salt.
  9. Add the minced garlic to the pan and stir, cooking for about 30 seconds until fragrant, being careful not to burn it.
  10. Deglaze the pan: Add 1/2 cup of beef broth and scrape up all the delicious browned bits (fond) from the bottom of the pan. Reduce heat to a simmer and let it simmer while preparing the sauce slurry.
  11. In a separate bowl, whisk together the remaining 1 1/2 cups of beef broth with 1 tablespoon of Worcestershire sauce and 2 tablespoons of all-purpose flour until all the flour is dissolved and it forms a smooth slurry.
  12. Once most of the liquid has cooked out of the pan with the vegetables, add the beef broth slurry.
  13. Bring the mixture to a boil, then reduce the heat to a simmer and let it thicken for about 5 minutes, stirring occasionally.
  14. Remove the pan from the heat and stir in the plain fat-free Greek yogurt until well combined and creamy.
  15. Return the cooked turkey and any reserved juices to the pan with the sauce. Stir gently to combine.
  16. Let the stroganoff sit for about a minute to heat through. Taste and adjust seasoning if necessary.
  17. Serve immediately over a bed of cooked egg noodles (approximately 1 cup cooked noodles per serving).
  18. Garnish each serving with chopped green onion.
