Delicious Homemade Fruit Salad
Ingredients

For the Dressing
- ○ zest of half of a lime-ish
- ○ about two tablespoons of lime juice
- ○ about three tablespoons of honey
- ○ A tablespoon or two of a really nice orange liqueur (optional)
- ○ some more orange juice or something else (optional, if not using liqueur)
For the Fruit Salad
- ○ Grapes
- ○ Mandarin oranges (canned, or fresh oranges to yield about a cup of orange premiums)
- ○ Kiwis
- ○ about a pound of strawberries
- ○ raspberries
- ○ One pound of blackberries
- ○ one cup of pineapple (canned)
- ○ one or two bananas (optional)
Instructions

- First off, wash that fruit. It could have little bits of crud on it that you do not want to eat, and you might find a bunch of moldy stuff that no one wants to eat either. So give it a look over and make sure there’s no bad apples or bananas in there. Mastering fundamental steps like these is key for success in easy baking recipes from scratch.
- Set everything aside on a paper towel to blot dry because you don’t want to inject a bunch of water into this. You want only delicious flavors, so you know, just pat your, pat everything dry.
- While my cleaned fruit is drying off just a little bit, I’m going to make the dressing, starting off with a zest of half of a lime-ish. Don’t go crazy. Also, do not get the pith off. It’s just the very, very end of the skin, the green part. The pith is bitter.
- Now add in about two tablespoons of lime juice. You can really eyeball this.
- Next, add in about three tablespoons of honey. Give it a whisk. It’ll take a second because the honey is real thick. That’s because it has a low water content, but it will soak up that water and turn into a nice delicious dressing. For another tasty option, try making homemade copycat Olive Garden salad dressing.
- Optionally, add a tablespoon or two of a really nice orange liqueur. You don’t have to use this though. It’s totally optional. If you want, you can go ahead and just add in some more orange juice or something else. A couple tablespoons in you go.
- Whisk, whisk, whisk. Set this aside. Kind of infuse and just be wonderful.
- For the grapes, halve them to make them really easy to put onto a fork or a spoon. Do whatever you’d like. This is how I cut grapes. I think you have the most control over a knife, but it’s closest to your body and moving slowly. Then just transfer it to your bowl.
- If using fresh oranges instead of canned mandarin oranges, premium an orange yourself. Use a knife to cut the skin off. You do not want to like, you know, massacre the orange. You want to like let retain most of its flesh, but you do want to remove all the pith. To premium the orange, just use a sharp knife and cut in between the membranes. It’s best to do this actually over the bowl so you’ll get all that delicious orange juice coming in. Repeat that process with a couple more oranges. You want to have like about a cup of orange premiums.
- For the kiwis, I like to cut them in half and then use a spoon to just remove the skin from the flesh. Again, you could do this over the salad so it captures some of those juices. Kiwis are chopped.
- For the strawberries, take that top off and then just give them a couple slices. Nice little bite sized pieces. All right, one pound of strawberries in you go.
- Add in half of your raspberries. These are really like very delicate ones. So I’m going to save some for on the top.
- Add one pound of blackberries.
- Add one cup of pineapple. This is full transparency out of the can. I actually have a whole pineapple, but I don’t know, I have so many cans of this and it’s already prepped. So I’m using the can stuff. It tastes really good.
- You can also add one or two bananas, whatever you feel like. For another delicious way to use bananas, try this easy moist banana bread with raisins and walnuts.
- That’s all done. Dress this up and we’re going to give it a little toss.
- You can make this the night before it really comes together. I find that the acid from all these other fruits keeps the banana from browning too much, but if it really bothers you, add the banana in just before serving.

- For the Fruit Salad Array
- 1 Wash all the fresh fruit thoroughly. Inspect for any bruised or moldy spots and discard. Gently pat all the cleaned fruit dry with a paper towel to remove excess moisture.
- 2 While the fruit is drying, prepare the citrus dressing. In a small bowl, add the zest of half a lime, making sure to avoid the bitter white pith. Add two tablespoons of fresh lime juice and three tablespoons of honey. Whisk vigorously until the honey is fully incorporated and the dressing is smooth.
- 3 Optionally, add one to two tablespoons of orange liqueur for an extra layer of flavor. If you prefer not to use liqueur, add one to two tablespoons of orange juice instead. Whisk again until well combined, then set the dressing aside to allow the flavors to infuse.
- 4 Prepare the fruit for the salad. Halve the grapes and transfer them to a large mixing bowl.
- 5 If using fresh oranges, premium them by cutting off the skin and removing all pith. Then, use a sharp knife to cut segments between the membranes. Do this over the mixing bowl to capture all the delicious orange juice. Aim for about one cup of orange segments. If using canned mandarin oranges, simply drain and add them to the bowl.
- 6 For the kiwis, cut them in half and use a spoon to scoop out the flesh. Chop the kiwi into bite-sized pieces and add to the bowl.
- 7 Hull the strawberries by removing the green tops, then slice them into bite-sized pieces. Add the pound of sliced strawberries to the bowl.
- 8 Add about half of the raspberries and all of the blackberries to the fruit bowl. Reserve the remaining raspberries for garnish, as they are quite delicate.
- 9 Drain the canned pineapple chunks and add one cup to the fruit mixture. If using bananas, slice one to two ripe bananas and add them to the bowl (or add just before serving to prevent browning).
- 10 Pour the prepared citrus dressing over the fruit salad. Gently toss everything together to ensure all the fruit is coated with the delicious dressing.
- 11 Serve immediately, or chill for at least 30 minutes for best flavor. Garnish with the reserved raspberries before serving, if desired.
